Simple+Delicious Red Meat Sauce
my go to meat sauce for pasta
Ingredients
2 shallots
1 large carrot
1 large celery stalk
6-8 cloves of garlic
1 lbs ground beef
1-2 tbsp olive oil
1 tbsp tomato paste
1 28 oz can diced or crushed tomatoes
1 28 oz can fire roasted diced tomatoes
14 oz water (fill a tomato sauce can halfway)
4 basil leaves cut into ribbons

Directions
Shred both shallots into a bowl
In a separate bowl, shred the carrots, celery and garlic
Use a pot or a deep pan and sauté the ground beef in 1 tbsp of olive oil
After the meat is browned, remove the meat from the pot with a spoon and leave the grease/ fat left behind. We are using that to saute the veggies
Pour another tbsp of olive oil into the fat and add your shallots. Saute on medium low for 3-4 minutes
Once the shallots are slightly translucent, add the celery, garlic and carrots and sauté for 4 minutes
Add 1 tbsp of tomato paste and stir into the veggies until they all have a red hue
Turn the burner to low and allow the veggies to simmer for up to 40 minutes. Just make sure the heat is very low. if youre in a rush you can turn up the heat and expedite the process.
Pour in both the diced tomatoes and the fire roasted tomatoes
Fill up a tomato can halfway with water and add it to the pot
Put your ground beef into the sauce
Chop 4 basil leaves into ribbons and add to the sauce
Add salt and pepper to taste (Add more than you think, dont be afraid to season your sh*t)
Add at LEAST 1/4 a cup of fresh shredded parm and if you have any parm rinds lying around, throw one in there as well
Simmer for at least 30 minutes, but the longer you simmer, the better the sauce tastes!
Boil your favorite pasta, pour your sauce over and ENJOY!
